I love Christmas and I’m not ashamed of it. Everything that comes along with this merry holiday makes the inner child in me want to run around in circles singing ‘jingle bells’ until I’m dizzy and sick. My favourite part is not the presents but of course the inevitable gathering of delicious foods, from the seafood starts, turkey and trimmings, right through to decadent desserts and the god forsaken food coma.

With a feast come yearly favourites and special requests, and this year is no different. For as long as I can remember I’ve been asked for my signature dish, and I use that word lightly as I don’t feel like it’s my signature dish but it’s the one that get the most requests from friends and family. Last year I decided to put together a little something for my friends and family that would help them recreate this recipe in their own kitchens because well, there’s only one of me.

This dish is my signature spice baked chicken wings. A blend of exotic spices that I have put together and is a staple in my pantry. I have since developed quite a few recipes that incorporate these flavours and you’d be surprised at how versatile they can be.

The aromas that come from my oven when these wings are baking are intoxicating. “You can smell it from the elevator, my housemate used to say as he walked through our apartment door. Friends would visit with trays of chicken wings ready to be dressed in these spices and it’s the most requested dish at BBQs, birthday parties and of course, Christmas lunch. I don’t have a name for these spices so for now let’s call them Lee Chan’s Signature Spice.

This year I’ve decided that these spices are too good to just be sitting in my pantry so I’ve packaged them and I’m proud to announce that they’ll be available on my website in 2016. I promise it’s not a hard recipe at all and may your kitchens be invigorated with the aromas of my spices.

 

Lee Chan’s Signature Spiced Baked Chicken Wings

Serves 4

Time: 35 minutes

 

Ingredients

4tbsp Signature Spice

1kg Chicken wingettes

2tbsp Olive Oil

 

Method:

1. Preheat the oven to 180 C

2. Place all ingredients in a mixing bowl and massage spices into wingettes making sure all the wings are well coated in the mixture, alternatively you can place them on the baking tray, drizzle with olive oil and generously sprinkle the spice mix onto each wing, flip them over and repeat.

3. Place wings in the oven for 29 minutes turning once at the 15 minute mark. Once cooked, take them out of the oven and leave them to cool and rest for 5 minutes before serving*.

* Spices have Himalayan pink salt added to the mixture soextra season will notbe required.
